Droëwors is biltong's sibling — the same cure, the same patience, but in sausage form. We use grass-fed Australian beef, season it with roasted coriander and a whisper of clove, then hang it until it snaps cleanly. Nothing else in it. If you have only ever had commercial cabanossi, this will reset your expectations.
